Creamy Mushroom Risotto

Ingredients
  

  • 2 medium white onions about 300 g
  • 3 cloves garlic
  • 9 oz mushrooms 250 g
  • 1 tbsp fresh thyme chopped, about 5 g
  • 2 vegetable bouillon cubes
  • 4 cups water 1 liter
  • cup dry white wine 150 ml
  • 1 cup Arborio rice 200 g
  • ½ cup Parmesan cheese, grated 50 g
  • 2 tbsp butter 30 g
  • ¼ cup fresh parsley, chopped 15 g
  • olive oil as needed
  • 1 tbsp soy sauce
  • black pepper to taste

Method
 

  1. Sauté the finely chopped onion in olive oil until soft.
  2. Add ¾ of the mushrooms and cook until their moisture evaporates and they lightly brown.
  3. Add crushed garlic and thyme; sauté briefly.
  4. Stir in soy sauce, let it evaporate, then transfer the mushrooms to a separate bowl.
  5. Dissolve the bouillon cubes in water, bring to a boil, and keep the broth hot over low heat.
  6. In the same pan, sauté the remaining mushrooms with the onion.
  7. Add the rice and cook for about 1 minute, stirring constantly.
  8. Pour in the wine and let it fully absorb.
  9. Add hot broth one ladle at a time, stirring continuously, until the rice is al dente.
  10. Remove from heat and stir in the reserved mushrooms, Parmesan, butter, and parsley. Season with black pepper and serve immediately.
