Thai Curry White Fish Bites

Ingredients
  

  • 1 lb firm white fish 450 g, cod, haddock, or tilapia, cut into 1½-inch chunks
  • 1 tbsp red or green Thai curry paste
  • 2 tbsp coconut milk 30 ml
  • 1 tsp lime juice 5 ml
  • 1 tsp fish sauce or soy sauce 5 ml
  • ½ tsp garlic powder 2.5 ml
  • 1 tbsp neutral oil 15 ml, plus more for cooking
  • salt and black pepper to taste

Method
 

  1. Make the marinade: In a bowl, whisk together Thai curry paste, coconut milk, lime juice, fish sauce (or soy sauce), garlic powder, and a pinch of salt and pepper.
  2. Marinate the fish: Add fish pieces and gently toss to coat evenly. Cover and refrigerate for 15–20 minutes.
  3. Preheat the pan: Heat a skillet or grill pan over medium-high heat. Lightly oil the surface.
  4. Cook the fish: Place fish pieces on the hot pan, leaving space between them. Cook for 2–3 minutes per side, turning gently, until golden and cooked through (opaque and flaky).
  5. Rest and serve: Remove from heat and let rest for 1 minute. Garnish as desired and serve immediately.
