This Apple Oat Crumble Cake is made without flour or refined sugar. The sweetness comes from agave syrup, while oats and apples add fiber and texture. Mascarpone or Greek yogurt keeps the cake soft and moist. It works in both the air fryer and oven.
Ingredients:
- 3 medium apples, diced
- 3 eggs
- 3 tbsp agave syrup
- 1 cup mascarpone or Greek yogurt (8.8 oz / 250 g)
- 1 2/3 cups rolled oats (150 g)
- 1 tsp cinnamon
- 1 tsp vanilla sugar or 1 tsp vanilla extract
- Optional: 1 handful walnuts
Instructions:
- Preheat the air fryer or oven to 350°F (180°C).
- In a bowl, whisk the eggs with agave syrup and vanilla.
- Add mascarpone or Greek yogurt and mix until smooth.
- Stir in oats and cinnamon.
- Fold in apples and walnuts.
- Pour the batter into a baking pan suitable for an air fryer.
- Bake for 40 minutes in the air fryer or 30–35 minutes in the oven.
- Verify doneness with a toothpick and let cool before slicing.
